This luxurious lasagna, made with three different meats, is traditionally served

all across Southern Italy during the holidays as a treat for the visiting family and friends.

 We thought it only appropriate that we welcome our new friends to

the Inn this holiday season with this special dish.

  La Tunnina del Rais Gioachino Cataldo

(Tuna of the King)

Seven miles off the west coast of Sicily lies the barren island of Favignana,

the last of Sicily’s tonnare or tuna fishing ports. For millions of years, large schools of tuna

 have migrated past this tiny island. They first attracted the attention

of the Phoenicians who settled the island sometime prior to 1,200 BC.

Later the Romans and the city of Carthage fought over the island during the first Punic

War. Now the island is known for its “Rite of the Mattanza”. This is a spiritual based ceremony

 of capturing the migrating tuna that dates back over a 1,000 years.

 This recipe for tuna is the personal favorite of Gioachino Cataldo, the King of “La Mattanza” and as he says,

“The only way tuna should be eaten”.

(“Little Oranges”)

Rice is normally associated with Northern Italy but the Spanish introduced

rice growing to Naples in the 15th Century. It is agreed by almost all Italians

that the most  fanciful uses of rice come from the areas around Naples:

the Suppli of Rome, Bomba di Riso of Tuscany, and finally these Arancine from Sicily

that provide the perfect answer to that age old question;

What in the world do you do with day old risotto? You make these wonderful treats.
